Course Overview

What's it all about? 

This programme is aimed at those already working in and developing their role within a supervisory or managment team in the hospitality industry or licensed trade.

You will need to demonstrate leadership of your team, productive working relationships with colleagues, contribute to the control of resources, maintain health, hygiene, safety and security of the working environment and lead your team to improve customer service. You will choose appropriate units depending on your job role.

Progression 

Successful students may progress to the Foundation Degree in Hospitality Management.

What's it all about? 

Do you have a passion for creating dishes and recipes? On our course, we will get you practising your culinary expertise in an industrial kitchen. You will learn more than just how to create a simple stock or soup. You will learn about balancing colours and textures on a plate and how to refine seasoning to an art to perfect the texture and flavour of the foods you prepare. You will learn to store foodstuffs safely, deal with kitchen documentation and ordering stock, and handle your working relationships.

Progression 

This qualification gives you the opportunity to either develop a career in the hotel and catering industry or to progress to the City and Guilds Level 3 Diploma in Professional Cookery or City and Guilds Level 3 Diploma in Professional Cookery Patisserie and Confectionery.

On this advanced level course, you will learn how to prepare, cook and present to a high standard, a wide range of hot and cold pastry items and complex fermented dough products. We'll teach you how to produce marzipan sweets and petite fours and which are the the best techniques to use when working with sugar and chocolate. You'll soon acquire the skills to produce high quality patisserie and confectionery items that are needed to pursue a career as a pastry cook and pastry chef.

This hands on, practical course is designed to develop skilled and experienced bartenders. Working behind a fully equipped training bar at Plymouth Gin, you will learn how to use the correct equipment, accurately free pour and blend those perfect cocktails. At the end of this course, you will be able to wow your customers with your expert skills.

There are no formal entry requirements for this course, however, candidates should have some knowledge of bartending and cocktails.
