College Hosted Royal Navy Culinary Arts Team
The Royal Navy Culinary Arts Team presented their prestigious Parade de Chefs final practice on Thursday 5 October at City College Plymouth’s popular PL1 Restaurant.
This was the third year running that the Royal Navy’s top catering team chose the College for their final presentation. They were supported by hospitality students running front of house operations, and trainee chefs observed the different methods of cookery and service skills.
It was the team’s final practice before heading to the Exercise Joint Caterer competition – a three day event, held at the Joint Service Defence Academy in Shrivenham. This annual Tri-Service competition aims to provide caterers, chefs and stewards with a platform to help develop their culinary skills for the benefit of the Armed Forces.
The prestigious event, the Parade de Chefs, saw personnel sweat over hot stoves to prepare a three-course meal for 80 people, seated at ten tables, at ten-minute intervals.
The set menu for the practice evening featured a confit salmon starter, a main course of faggot wrapped lamb loin and a brie cheesecake with apple and blackberry curd. Served with military precision, the evening was a great success.
This year Chaz Talbot, Academy Manager for Hospitality and Care at City College, will be co-ordinating the Exercise Joint Caterer competition, he said: “I was absolutely delighted to host Parade de Chefs final practice again this year. As a serving member of the Royal Naval Reserves I am still heavily involved with the catering services branch and keep in regular contact with the team. Last year’s event proved to be an unmitigated success, with over £800 raised for charity in the process. The popularity of this concept continues to increase and I hope that we can continue to support the Royal Navy for many more years to come.”
