This course is suitable for students who have some cake decorating experience and who want to learn the art of royal icing. After the cake is covered with sugar paste, this is a fairly intense course which will teach you how to make run-out sectional collars, extension work, wired sugar holly and ivy, and stencil techniques to create the elegant and traditional style of Christmas cake.
On the five week course, you’ll learn the following skills;
- how to marzipan and ice a cake
- how to make run-out collars, stencil snowline, stencil lettering and pressure piped holly leaves
- how to make sugar ivy
- how to make sugar holly
- linework, extension work, Christmas trees and how to attach collars.
