About the course

Do you have a sweet tooth? Or maybe just the desire to indulge other people’s? Either way, this pastry chef training course will provide you with the patisserie training and confectionary skills you need for as a job as a pastry chef, specialising in all things sweet. As well as advanced patisserie and confectionary techniques, this course will include advanced work in sugar and chocolate and will ensure you have all the skills required for a successful career as a pastry chef in any high class establishment.

What you'll learn

Subjects that will be undertaken to develop advanced skills and techniques in producing:

  • dough and patter
  • petits fours
  • pastry products
  • hot, cold and frozen desserts
  • cakes and sponges
  • display pieces and decorative items.

To support the development of these skills, you will also undertake the following topics:

  • food safety supervision
  • supervision in the professional kitchen
  • sustainability
  • gastronomy.
Entry requirements

The level 3 diploma in Professional Cookery would be an advantage, but is not necessary to complete before starting this course. In our experience, in order to be successful on this level of course you will need to have gained five GCSEs at grade 4 (C) or above.

What's next?

Upon successful completion of this course you may wish to progress to the Hospitality and Tourism Management Foundation Degree at the College. Alternatively, you could progress to an advanced Apprenticeship or enhanced employment opportunities.
