If you already work in a professional kitchen and are seeking an evening catering course or chef training, this NVQ in Food Preparation and Cooking at City College Plymouth is a great option for you. Do you have a passion for cooking? Creating recipes and menus from base ingredients? On this professional cooking course, we will assess and develop your existing skills for working in restaurants, hotels or kitchens. We focus on creative exploration of base products and ingredients, challenging you to adapt menus and create mouth-watering dishes while remaining on a budget.
This course centres around the preparation and cooking of vegetables, stocks, soups, sauces, meat, fish, poultry and pastry products.
You must be in current employment in the catering industry.
Each practical unit is assessed formatively in the workplace or College and has a written short answer test.
On successful completion, you may wish to progress onto a level 3 hospitality and catering course at the College.
Fees quoted apply to courses starting in the academic year 2018/19 (August 2018 – July 2019). There may be a slight increase in fees for courses starting 2019/20.
