Learn how to marzipan, flat ice and decorate a celebration cake professionally using traditional skills to include shells, scrolls, graduated linework, piped lettering and piped flowers. Guidance will be given on how to mix and colour royal icing, make piping bags and work with different consistencies of royal icing. Students will be required to bring their own equipment and an 8” or 9” round fruit cake.

On successful completion of this course, you could go on to study a wide range of catering short courses at the College.
