College to Host Royal Navy Culinary Arts Team for Second Year

The Royal Navy Culinary Arts Team will be presenting their prestigious Parade de Chefs final practice on Wednesday 5 October at City College Plymouth’s popular PL1 Restaurant.

It is the second year that the Royal Navy’s top catering team have chosen the College for their final presentation and their chefs will be assisted in the kitchens and front of house by hospitality students from levels 1 – 3.

This is the last practice the navy team will have before the Exercise Joint Caterer competition – a three day event, held at the Defence Academy in Shrivenham, which aims to provide caterers, chefs and stewards with a contest which develops their culinary skills for the benefit of the Armed Forces.

The prestigious event, the Parade de Chefs, will see personnel sweat over hot stoves to prepare a three-course meal for 80 people, seated at ten tables, at ten-minute intervals.

The set menu for the practice evening features a rabbit terrine with pickled vegetables, a main course of beef cheek and rosti and a chocolate dessert with a cherry theme. Due to the very nature of the competition, the chefs are not permitted to deviate from the menu, meaning that no variations will be available on the night, including changes for vegetarians or those with specific dietary requirements. Served with military precision, the evening promises to be a culinary dining experience not to be missed.

Chaz Talbot, City College’s Academy Manager for Hospitality and Catering, who led the naval team to victory in the 2014 competition, said: “I am absolutely delighted to host this prestigious event again this year. As a serving member of the Royal Naval Reserves I am still heavily involved with the catering services branch and keep in regular contact with the team. Last year’s event proved to be an unmitigated success, with over £800 raised for charity in the process. The popularity of this concept continues to increase and I hope that we can continue to support the Royal Navy for many more years to come.”

Places at the Parade de Chefs dinner are offered at £15 per head, which includes a delicious three course meal.

There are limited spaces available for this event. Those wishing to reserve a space are encouraged to book early by calling the College’s PL1 Restaurant on 01752 305777. Guests will be seated at ten minute intervals to allow for students to practise their timings for the final competition.
