As a Chef de Partie apprentice, you’ll play a crucial role in a professional kitchen, overseeing a specific section and ensuring the highest standards of food quality and presentation. You will specialise and contribute to the creation of exceptional dishes. Your responsibilities may include preparing ingredients, cooking and plating dishes, maintaining cleanliness, and ensuring compliance with food safety standards. This Apprenticeship offers a diverse range of experiences and opportunities to hone your culinary expertise in a dynamic and fast-paced environment.

Course information

This Apprenticeship will cover various areas including:

  • advanced food preparation and cooking techniques
  • kitchen supervision and team management
  • food safety and hygiene
  • menu development and quality control.
This Apprenticeship spans 18 months, combining practical work experience with study. At least 20% of your time will be dedicated to off-the-job training, where you’ll gain valuable knowledge and skills through structured learning and hands-on practice. The remaining 80% will be spent working within a kitchen, applying your learning in real-world culinary tasks such as preparing complex dishes, overseeing kitchen sections, and ensuring high standards of food quality and safety.

For the best chance of success, learners are required to have a minimum of grade 4 (C) in English and maths.

The end point assessment will consist of an observation with questions, a professional discussion underpinned by a portfolio of evidence and a knowledge test. 

Following successful completion, you could progress onto employment within the sector. This could include roles such as a chef de partie, a line chef, a section chef, etc.
