As a Production Chef, you’ll be at the heart of delivering high-quality dishes in various fast-paced catering settings, from restaurants and hotels to schools and hospitals. You’ll gain hands-on experience with a variety of cooking techniques and kitchen operations, develop critical skills in preparing, cooking, and presenting food, and learn to work efficiently both independently and as part of a team. This Apprenticeship offers a comprehensive pathway to mastering the craft of a production chef, from understanding dietary requirements and nutrition to managing food safety and hygiene, all while contributing to the satisfaction and well-being of diners.

Course information

This Apprenticeship will cover various areas including the following:

  • preparing, cooking, and finishing a variety of dishes
  • maintaining the kitchen, utensils, and equipment
  • adhering to health, safety, and hygiene regulations
  • working effectively as part of a team
  • understanding and implementing portion control and waste management.
This Apprenticeship spans 12 months, combining practical work experience with study. At least 20% of your time will be dedicated to off-the-job training, where you’ll gain valuable knowledge and skills through structured learning and hands-on practice. The remaining 80% will be spent working within a professional kitchen environment, applying your learning in real-world scenarios.

The entry requirements for this Apprenticeship will be decided by the employer, but may typically be five GCSEs at grade 4 (C) or above.

The end point assessment will consist of an on-demand test, a practical observation and a professional discussion. 

Following successful completion, you could progress onto employment within the sector. This could include roles such as a head chef, a chef de partie, a sous chef, etc.
